Some ideas and tips:
For cabbage, KY Cross is ideal to eat raw (for coleslaw) and if cooking, add cabbage at end (or your cabbage will be melted).
For carrot tops, you could make pesto.
For chard (swiss chard), please check out my post.
Cilantro can stay fresh if you put stems in water (Do remember to change water regularly). You can start by placing your cilantro in a cool part of the kitchen and transfer in a couple of days in refrigerator with stems in water.
